This precast Italian wood burning oven boasts a 31.5" internal diameter, enough to satisfy the wants of a party or the needs of a small restaurant. The oven is made entirely of ALUTEC® mixture with very high alumina content (70%). Equipped with metal door and thermometer. The oven can be used for cooking pizza, meat, and bread. This is a traditional Italian dome oven (also known as a "direct fire oven") in which heat is transferred via direct radiation of the flame inside the cooking chamber, conduction of heat from the lower fire plane and reflection of heat from the inner surface for the upper vault. Simply put, this is an amazing oven! The material is very crack-proof. The oven is very versatile in that it can be finished with virtually any design as some of our pictures indicate. This includes stucco, stone veneer, pavers, bricks, copper, steel, etc. The oven is strong enough for restaurant cooking where it will need to remain hot for 12+ hours. The Volta oven is also an excellent choice for pizza trailers, offering a reliable cooking engine for fairs, festivals, shows, outdoor events, etc. Once properly insulated the oven will have a quick heat up time: 40 min. to an hour. The chimney opening is positioned above the front arch which is pictured and supplied with the oven. When the oven door is closed the cooking area inside the oven is completely enclosed which helps retain the heat for days if the oven is properly insulated. When the wood is burnt the door needs to remain open to ensure supply of oxygen and elimination of smoke. This is the traditional Italian wood burning oven design. This system provides excellent and uniform heating of the structure, making heat available for cooking long after the fire has been put out. Both the floor and the dome of the oven need to be insulated with either firebricks, vermiculite, rock wool, or ceramic fiber blanket and mineral fiber board. Floor insulation is included!
